A silicone proofing box with a lid, for one dough ball. Under the lid the surface of the dough doesn't dry out, the boxes stack, and after use they collapse to 3 cm, so they take up no shelf space between bakes.
Dough turns out well when its surface doesn't dry out during proofing. That is hard to manage in a bowl under a tea towel; a box with a lid holds the moisture in, so the ball stays soft and easy to stretch right to the end.
One ball goes into this box, 250 to 300 grams of dough, which is the right amount for a 26 to 32 cm pizza. The lid closes it and the boxes stack, so four pizzas' worth of dough fits on a single fridge shelf.
Silicone is the right material here because of storage: after use the box collapses to 3 cm. And it is not only for dough. Use it to prep toppings or to keep leftovers, from the freezer through the microwave to the dishwasher.
