A proofed dough ball sticks to the bottom of the proofing box, and prying it out with the wrong tool pushes the air straight out of it. This spatula flexes: it slides flat under the dough, lifts it, and moves it onto the floured bench with the bubbles still in place.
The airy, blistered cornicione of a Neapolitan pizza comes from the gas built up during proofing. The easiest place to lose it is when you empty the box: lift the ball with a spoon or a knife and the side tears, and the pizza stays flat.
The blade of this spatula bends, so it follows the bottom of the box and slides under the dough in one motion. The wide head carries the ball while you lift it, and the thick handle stays put even with floury, sticky hands.
It is not only for the proofing box. Use it to scrape the last of the dough off the mixer bowl, to gather flour and dough scraps from the bench, and to push back the dough that climbs the spiral arm while kneading.
